MVCTC Aspire Launches Innovative Food Handling Program for ESOL Students

The Miami Valley Career Technology Center (MVCTC) Aspire program launched a new Food Handling Integrated Education and Training (IET) program designed specifically for English for Speakers of Other Languages (ESOL) students. This initiative program provides a pathway for participants to strengthen their English language skills while gaining career-specific training and certification for the food service industry.

A Unique Opportunity

The program began on November 12, 2024, and will run through December 6, 2024. Eight dedicated Level 4 ESOL students are participating in this pilot class, each working toward earning their State of Ohio Food Handling Certification. This credential is a valuable asset, equipping participants with essential knowledge and skills to thrive in food service careers.

This innovative program was made possible through the availability of Chef Gary O'Brien, who had an opening in his schedule after completing his fall class. Plans are underway to offer the program again when scheduling allows.

Program Structure

The Food Handling IET program combines online learning with hands-on instruction in a hybrid model that prepares students both academically and practically for success in the food service industry.

1. Online Learning

Facilitated by Aspire Transitions Coordinator Lisa Witt, the two-week online component introduces students to career-specific English language content through the EnGen platform. This interactive module focuses on preparing students for both certification and practical application by covering:

  • Food Handling Essentials
  • Food Hazards and Risks
  • Food Allergies and Intolerances
  • Personal Hygiene in Food Service
  • Kitchen Sanitation and Safety

2. Hands-On Training

Following the online portion, students move into the kitchen for in-person training under the guidance of Chef Gary O'Brien. This phase allows students to apply their knowledge in a practical setting, using the industry-recognized ServSafe Person in Charge program to develop real-world food safety skills.

The success of this program highlights the collective efforts of the MVCTC Aspire team:
  • Lisa Witt, Transitions Coordinator, leveraged her expertise with the EnGen platform to ensure seamless online learning.
  • Full-time coordinators arranged classroom space and laptops, ensuring students had the resources needed to succeed.
  • Samantha Myers, IET Instructor Lead, provided supplemental learning materials, including ServSafe Food Handler consumable books.
  • Chef Gary O'Brien, a key instructor, is delivering the in-person kitchen training.
